Few things are better than chocolate cookies with chocolate chips and some chocolate glaze on top. As we all know from our own experiences, chocolate does make you happy :-). Actually, the cocoa is the reason for that. The higher the cocoa percentage of the chocolate the more the chocolate smoothes stress and nervousness.
And to avoid chocolate out of a package getting samey, chocolate cookies with cocoa and with dark chocolate chips are a great sweet delicious variation.
This soft chocolate cookie taste enormously good. Chocolate with chocolate with chocolate!
Recipe – 18 cookies:
110g plant-based butter, at room temperature
90g fine granulated sugar
90g brown sugar
90g plant-based milk
2 tbsp vanilla extract
1 tsp baking powder
1 pinch of salt
150g dark chocolate chips
Optional chocolate glaze:
50g dark chocolate
1 tsp coconut fat
Baking: 170° – 13 minutes
Whisk the plant-based butter with the granulated and the brown sugar to a creamy, fluffy mixture. And put the vanilla extract into it. And put the plant-based milk into the batter sip by sip.
Combine all the dry ingredients, flour, baking powder, salt, and cocoa in a bowl. And then put it into the butter-sugar mix spoon by spoon, and let it stir in.
When everything is well combined, put the chocolate chips into the batter and stir them in.
After that form small cookie dough balls with your fingers (approx. 1 tbsp dough) and put them onto a baking sheet. Then carefully press them down a little bit with your fingers.
Then place them on a baking tray and put them into the oven. Let them bake for about 13 minutes.
