The best thing to conquer the daily challenges is having a good and healthy breakfast.
Chia pudding still is one of my favorite breakfast options. In combination with some plant-based yogurt and something fruity and maybe sweetened with some syrup, it is a super delicious breakfast. The great benefit of chia seeds is, that they keep you full for a long time.
I mixed the frozen mango pieces with some freshly squeezed orange juice. Mango and orange flavors go together really, really well. You should definitely try this combination. Of course, you can use some store-bought juice too. And if you fancy fresh mango, go for it 🙂 .
To top this breakfast recipe I used some puffed quinoa. Puffed quinoa brings in some nutty flavor. You can top any other cereal bowl, oatmeal, overnight oats with some puffed quinoa. Or you can make a tasty and healthy chocolate snack:

Recipe – 2 servings:
6 tbsp chia seeds
700ml water
4 tbsp plant-based yogurt (plain, unsweetened)
300g mango, frozen pieces
1 orange
6 tbsp puffed quinoa
Mix the chia seeds with water and yogurt.
Cut the orange in two halves and squeeze them to get the juice out. Blend the mango pieces with the orange juice until you have a smooth fruit puree. Taste test if you want to add any syrup to sweeten it.
Now fill the chia pudding in glasses or bowls. Add the mango – orange puree. And on top of that add the puffed quinoa.
