For your little in-between snack, this is the perfect recipe: Quinoa Chocolate bites.
With puffed quinoa and dark chocolate – this snack is made really easy and super quick. And if you crave something sweet and healthy you can grab one, two, or three of these bites ;-).
In the twinkling of an eye, you can make them yourselves for your (home) office desk or your lunchbox. You only need 4 ingredients!
For portioning the mixture you simply can put it on a baking (paper) sheet and let it cool down before putting the bites into an airtight box. You can also use mini muffin or muffin paper liners and fill the mixture into them – this is a little bit easier and you can grab and carry them in your lunchbox. And your fingers stay clean ;-).

Recipe (approx. 20 pieces – depending on the size you choose):
170g dark chocolate
2 tsp coconut oil
100g puffed quinoa
1 pinch of salt
Break the chocolate into smaller pieces and put them in a small bowl together with coconut oil and salt. Put the bowl over a pot with hot water. Let the chocolate melt and stir everything. Take the bowl off the heat.
Then add the puffed quinoa to the melted chocolate and stir until well combined.
Then place the mixture on a baking sheet or in paper forms with a spoon. You can decide how big or how small you want your bites.
Let the chocolate cool down (or put them into the fridge) and get firm again.
Store the quinoa chocolate bites in an airtight container.
