When I buy a 1-kilogram pack of blueberries and I need 200g of them for the ice cream recipe – guess what I did with the ‚remaining‘ 800g berries. :-D.
Exactly. Snack them just as they are, put them into the breakfast cereal, or as a berry snack in between or mixed with some plant-based yogurt. Now you can imagine how much I like blueberries? What’s your favorite berry?
The fruity ice cream recipe is super easy. For the popsicles, you only need 3 ingredients. And then you have delicious, fruity-sweet homemade ice cream. The great thing is you can decide yourself how sweet the ice cream should be. When tasting, you should keep in mind that the ice cream tastes less sweet when frozen than in liquid form at room temperature. So the juice has to taste a little bit sweeter as you would like to taste the popsicle.
This blueberry-apple juice ice cream is the perfect cooling off, a light, super delicious dessert, or just an extremely refreshing snack in between.
Guys, if you like blueberries, you will love the combination with apple juice. It will blow you off the socks. The sweet and sour apple juice further emphasizes the sweet, floral, and fruity blueberry taste.
When filling the forms, do not fill the molds to the top, remember that the sticks still have to be inserted and the liquid expands a little when it freezes.

Recipe (8 pieces, a 10x5cm):
200g blueberry
370g apple juice
3 tbsp agave syrup (or even more – as you like)
Stir up the apple juice with the syrup.
Puree the blueberries with the apple juice. If a lot of foam is building up, then take it off with a spoon. Or you can strain all of it through a sieve.
Then put the Juice into the molds. Stick the sticks into the molds. In the end put the popsicles into the freezer, at least for 3 hours, or overnight.
