How to pimp your apple a day: just bake a cake around it and add some cinnamon. 😉
There are many flavours around where you first may think: How bizarre! But then you find out how delicious it is. The combination of apple and cinnamon is surely not one of them – it is an all-time classic. Classics have a long tradition where no one exactly knows where they come from. They are here to stay because no one ever can get enough of them. Apple strudel, compote or apple puree – apple and cinnamon are friends for life. And I do not know if I mentioned it before – I love them all over!!!
The sweet apples make the muffins soft and fruity and the cinnamon – o dear! – supports them with its spicy flavour. These muffins are sweet little pieces of perfect soft muffin dough with fresh apples. Everybody will love them, and you have to be fast to grab one.
But – good news – they are also quick to make for a second round. Most likely you have all the ingredients ready in your kitchen!
For those with talented fingers and a sharp knife – you can try to structure the apple pieces as a rose on top. Therefore you just cut the apple into half and then cut off really thin layers. Apply some lemon juice to avoid them to get a brown colour. Layer and carefully fold them to a small rose-like depicted in the pictures below and set them slowly into the prefilled muffin dough.
For the other version, just cut the thin slices into half, apply the lemon juice as well and put them on top of the dough. And carefully push them a little bit into the dough.
No layers, no structure – Picasso freestyle! Just cut the apple into smaller or bigger pieces, again apply the lemon juice and place them randomly on the muffin dough. The taste will be the same.
Feel free to peel off the skin, but not needed if you use organic apples from your region. Of course, the rose muffins look better with the nice red colour.

Recipe (12 muffins):
185g flour
120g sugar
2 tsp baking powder
2 tsp vanilla sugar
1 ½ tsp cinnamon powder
50g oil
170g plant-based milk
2 apples
1 lemon
Baking: at 180° Celsius – for 18 minutes
Squeeze the lemon to get the lemon juice.
Cut the apples into halves, make slices or pieces, apply the lemon juice.
Mix all the dry ingredients (flour, sugar, baking powder, vanilla sugar, cinnamon).
Add the oil to the plant-based milk. Add this liquid to the dry ingredients until you get a smooth dough. Don’t overmix the batter.
Fill the muffin papers with the dough.
Add the apple slices or pieces on top and push them carefully a little bit into the dough.
Bake the muffins at 180° Celsius for 18 minutes in the oven.
After cooling coat the muffins with some powdered sugar.
