These vanilla cookies with chocolate chunks are sweet, cute, and most important: soooo good. With just one word: Irresistible.
The good news is, you only need few ingredients that you most likely already have at home. And within a maximum of 15 minutes in the oven, the cookies are ready to enjoy.
The vanilla sugar and the vanilla extract the full vanilla flavor. You can use storebought chocolate chunks or chips or drops. Or you simply cut a chocolate bar into pieces. In these cookies, I used the latter because while baking in the oven the chocolate melts and combines with the vanilla dough. Most store-bought options are not meant to melt while baking.
Make sure the plant-based butter and the yogurt are at room temperature. Then it is easier to whip it up together with the sugar and it gets a super fluffy mixture.

Recipe (17 – 19 pieces, depending on the size you choose to make):
170g flour
60g sugar
1 tbsp plant-based yogurt
3 tsp vanilla sugar
½ tsp baking powder
110g plant-based butter
2 tsp vanilla extract
75g chocolate / chopped chocolate
Baking: 170° celsius– 13 to 15 minutes
Whip the plant-based butter with sugar and vanilla sugar until it gets frothy. Add the vanilla extract and the yogurt.
Mix the flour with the baking powder. Then add it to the butter and sugar mixture. Mix until everything is well combined. Form a dough ball and put it into the fridge for about 5 minutes.
Chop the chocolate into small chunks. Then knead them into the cookie dough. Let the dough sit in the fridge for another 10 minutes.
Roll small balls of the dough (approx. 1 heaped teaspoon of dough). Put them on a baking tray or a paper baking sheet. In the end, gently press the balls down a little bit with your fingers. Put the cookies in the oven and let them bake for about 13 to 15 minutes at 170° celsius.
