Spinach from the freezer is a very practical vegetable. It’s quick to use and tastes really good.
On top spinach is quite healthy. And Popey already knew how healthy spinach is and how it strengthens your body ;-). Spinach contains lots of vitamins, like vitamins A, B, and C. As well as calcium, potassium, magnesium, iron, and folic acid.
I like to eat spinach, simply because I like its taste. Spinach for me has to be accompanied by onions. And spinach likes to be seasoned. For the full flavor in this dish, both salt and soy sauce are used. As crunchy bits, the roasted walnuts are added.
Alternatively, to quinoa you can also use bulgur or potatoes – both are very delicious in this spinach walnut bowl.

Recipe (2 servings):
400g spinach from the freezer
2 onions
70g walnuts
1 ½ tbsp soy sauce
1 tsp salt
½ tsp pepper
a little bit of olive oil for the pan
200g quinoa
1 tsp curry powder
1 tsp salt
400ml water + vegetable broth
For the quinoa:
Heat the water together with the vegetable broth and a pinch of salt, stir from time to time. Add the curry powder. Add the quinoa and boil it until the quinoa gets soft. This needs usually 10 to 15 minutes. Check from time to time if more water is needed.
For the spinach bowl:
Now heat a pan with medium heat and unfreeze the spinach.
The onions are peeled off and cut into pieces. Accompany the spinach in the pan. Roast it and stir it from time to time. Season with salt and pepper.
At the same time chop the nuts into pieces. As soon as the onions in the pan are roasted well add the nut bits to the pan.
Roast everything together and finally deglaze it with the soy sauce.
