Breakfast! YAY! Well, that is not my immediate thought in the morning. I’m definitely not a morning person!
How people jump out of bed full of energy and in a good mood will stay an unsolved mystery for me :-). I seriously don’t know how this should work ;-).
My mornings start with opening my eyes just enough to not stumble on my way to the kitchen.
Nevertheless, or just because of that, it is really important to me to have breakfast. For me, the best and almost daily version is a chia pudding breakfast. That’s because I found out it is a long-term filling but light option.
Chia seeds on their own do not have a special significant taste. So you can add any plant-based yogurt, milk, or nut butter. And I like the combination with some fresh fruit. For the fresh, fruity taste and some vitamins in the morning.

Recipe – 2 servings:
6 tbsp chia seeds
200ml water
2 tbsp plant-based yogurt
200g pineapple
200g melon (honeydew)
½ lime
1 tbsp coconut oil
1 tsp vanilla extract
Let the chia seeds soak in the water. You can do this overnight, or 30 minutes before serving.
Let the coconut oil melt in a small pot on low heat. Juice the lime. Then mix the coconut oil, the lime juice, and the vanilla extract with the chia pudding.
Cut the pineapple and the melon into small pieces/cubes. An mix it.
Now you can serve the chia pudding with the fruits in a bowl or in a glass.
Done!
