A few years back the relation between me and breakfast was non-existent.
But there was a point when I had to admit that’s not ideal. Skipping breakfast affects the rest of the day. For me, it backfired in the afternoon. It was inevitable. Hello, fatigue. Hello ravenous hunger, especially for anything sweet.
So at one point, I decided to change that. And I tried various breakfast recipes. From anything muesli to some smoothie recipes I found on the internet. But when you are not used to having something for breakfast, especially early in the morning it is quite hard to find something that meets your taste and is easy and quick to make. So I found breakfast smoothies were a real game-changer for me. Just put everything into a blender, sweeten if liked and you are ready to go. And they are also easy to take with you.
A simple smoothie with fruits or veggies is tasty, but for me, it’s more of an in-between snack. That’s why this breakfast smoothie recipe also has some oats and some nut butter in it. It makes the smoothie more filling, and it makes it filling for a longer period of time. It’s a light and wholesome start to your day!

Recipe – 2 servings:
200g blueberries (fresh or frozen)
1 banana
2 tbsp oats
1 lemon
1 tbsp almond butter or cashew butter
250 ml plant-based milk
optional:
1 tsp agave syrup / any other syrup (eventually more to your own taste)
5 mint leaves (for decoration)
Blend the oats.
Juice the lemon.
Then put all the ingredients in a mug (a blender) and blend them until you have a smooth smoothie ;-).
Done!
