Simple delicious Cherry Cake with Chocolate Chips

This cake consists of the best ingredients of a traditional classic – the german “Schwarzwäler Kirsch Kuchen”. Reassembled to a new simple recipe for you – and of course – vegan.

A simple cake dough, some vanilla, cherries, and chocolate chips, and on top a blob of plant-based cream. This results in a tasty cherry cake with chocolate chips.

To be honest I was not in the mood to make a fancy cake but had all the ingredients. I wanted the cake quick and easy. After the cherries are pitted you just have to mix the dough. Put it into the oven for 35 minutes. And have a nice cake break with a nice cherry cake with chocolate flakes and cream and a cherry on top!

If it is cherry season the fresh cherries are the best. But you get them already pitted as sour cherries all year long. The cherries are soft and sweet. So the best alternative to eating them fresh is to bake a cake. When using the cherries from the glass put them to a strainer and dry them carefully.

The juicy, soft dough with cherries and chocolate is really a delicate highlight. This classic combination is fine for everyone. And of course, everyone can decide how much cream he wants on top.

Recipe (springform ∅ 24cm):

200g flour
110g sugar
2 tsp vanilla sugar
1 tsp baking powder
1 pinch salt
50g oil
220g mineral water or sparkling soda water
80g chocolate chips
220g cherries

400g whipped plant-based cream

Baking: At 180° Celsius – for 35 minutes

Heat the oven and spread plant-based butter in the springform.

If you have fresh cherries, wash them, remove the pin, and split them.

Mix all the dry ingredients, flour, sugar, vanilla sugar, baking powder, and salt together.

Add oil and water and mix it in carefully and as short as possible. Now add the chocolate chips carefully and slowly.

Fill half of the dough into the springform to fill at leased the floor of it. Spread the cherries in the form but save some for the top of the cake and the topping. Finish it up with covering the cherries with the rest of the dough. Now spread some of the saved cherries.

Put the cake to the oven and bake it at 180° Celsius for 35 minutes.

Let the cake cool down completely and serve it with a blob of cream and – a cherry on the top!
