Based on a simple dough – just 3 ingredients – you can make 3 kinds of cookies: chocolate, coconut and matcha!
To prepare the cookies for the oven you have to form them to a roll to later cut down slices about 1,5 cm thick. Alternatively, you can roll out the dough with the rolling pin and then cut them out.
The described cookie mass is calculated for 12 cookies per type. Feel free to multiply the ingredients two or three times to get more cookies. The dough is perfect for being stored in the fridge. Best to prepare the dough already as a roll. On-demand you can “cut down” some cookies and store the rest of your dough again in the fridge for your next sweet toots cravings.
The cookies are perfectly sized for a sweet snack in between. Perfect with a good, steaming hot cup of tea or coffee. No matter which of the 3 kinds of cookies you choose – chocolate, coconut or matcha – all of them are yummy. They stay fresh for weeks in an airtight box – theoretically. Unfortunately, they did not have any chance to get old in my place ;-).
The chocolate cookie is perfectly sweet with a flavor of vanilla. The coconut version has loads of coconut flakes in it. These keep the cookie crispy and raise the flavor of coconut. Matcha fanatics get exactly what they want with the lemon-flavored matcha cookies.

Recipe basic dough for 12 cookies:
100g flour
80g plantbased butter
20g powdered sugar
1 tsp vanilla sugar
Chocolate cookies (for 12 cookies):
3 tsp cocoa powder
2 tsp vanilla extract
Matcha cookies (for 12 cookies):
1 ½ tsp matcha powder
½ lemon cests
Coconut cookies (for 12 cookies):
2 tbsp coconut flakes
The room warm plant-based butter, powdered sugar and vanilla sugar are whipped with the kitchen machine.
Add the flour and all the further ingredients of the kind of cookie you want to prepare. Finally, mix everything by hand to a homogenous dough.
Place the dough in the fridge for about 20 minutes so that the butter gets hard.
Form the dough to a roll with a diameter of about 4 centimeters. Cut off the cookies approximately 1,5 cm thick. Place the cookies on the baking paper on the baking plate.
Put them to the oven at about 170° Celsius for 13 to 14 minutes.
