Baking is more fun when the temperature is low. So the heat in the kitchen is bearable.
This soft cake is really done in no time. And already when it is baking in the oven it generates a great wonderful smell in the air. This cake makes your home literally a sweet home.
The two tasty friends carrot and apple – a combination that is well known. You get them as a sweet juice or as a fruity salad mix. A simple snack is to grate carrots and apples and – optionally – add some zwieback 🤤😋💜.
PS: The cake is already tasty without the icing. Simply dust it with some powdered sugar. And optionally some fresh berries on top.

Recipe (Springform ∅ 26cm):
Dough:
320g flour
200g sugar
2 packages vanilla sugar
3 tsp baking powder
1 pinch cinnamon
1 pinch salt
200g grated almonds
200g melted plant-based butter
3 medium-sized grated carrots
1 apple (your favorite kind)
1 cl (=10 ml) juice – carrot juice, carrot-apple juice, multivitamin juice – or: soda water
Icing:
200g powdered sugar
3 tbsp rum (or lemon juice, apple juice, carrot juice). The rum colors the icing into a light rose.
1 tbsp hot water
Preheat the oven to 180° Celsius.
Grate the carrots. Grate the apple. Squeeze out the apples softly to avoid that the dough gets too liquid.
Sift the flour and baking powder to a bowl. Add all the other ingredients step by step and mix them all.
Spread some plant-based butter in the springform. Fill the dough into the form and bake the cake in the oven.
Bake it for 35 to 40 minutes in the oven (make a stick probe to be on the save side).
The icing can be mixed with rum as well as with apple, carrot, or lemon juice. Feel free to mix them – as you like. Most important is to have 4 tbsp of liquid to get a good, smooth consistency for the icing.
After the cake is baked you can start with the icing. Just sift the powdered sugar into a bowl and add the liquid to mix it up altogether. Make sure to get a homogeneous icing.
Remove the cake from the springform when it is still warm. Put the icing on top of the warm cake and spread the icing. This works better if the cake is still warm. Add (rasp-)berries on top.
Ready to eat!
