It’s bundt cake day. Because it’s quick and easy to make. And everybody loves a piece of a bundt cake. And some of you get their bundt cake out of the back of the storage not often enough. Let’s do this!
Everyone should at least have one bundt cake recipe that works out really easy and super quick. And if you already have all the ingredients in your kitchen – perfect! so you should definitely try this bundt cake recipe with apple pieces and yogurt.’
Sometimes it has to be a classic cake recipe, well the vegan version of it :-). It’s kind of old-fashioned. No fancy-schmancy ingredients.
But the yogurt and the make the cake super tender. A pinch of cinnamon and some vanilla sugar make the taste complete.
Recipe for 1 bundt cake ( ∅ 22cm ):
125g plant-based butter (room temperature)
1 tsp vanilla sugar
1 package baking powder ( 8-10g )
1 pinch of salt
1 tsp ground cinnamon
250g plant-based yogurt (room temperature)
8 – 10 tbsp sparkling water
½ tsp powdered sugar
optional: 1 tbsp raisins
Bake it: At 180° celsius for about 50 minutes
The butter should be at room temperature and soft. The yogurt should also be at room temperature. So be sure to take them out of the fridge in time.
Grease the bundt tin with some butter and dust it with some flour.
Preheat the oven – 180° celsius.
Beat the butter with the sugar until you have a frothy mixture.
Mix the flour with baking powder and cinnamon.
Then add flour and yogurt alternately to the butter-sugar mixture.
Peel the apple and cut it into pieces.
Mix the apple pieces and the sparkling water with the dough. Then spread the dough evenly into the tin.
Bake the bundt cake for 50 minutes.
Let the cake cool down and then overturn the cake from the mold.
Dust the cake with some sifted powdered sugar.
