Layered dessert: Chocolate Cake Strawberry Yogurt Dessert – Vegan Trifle

Can you ever get enough of your favorite sweet treats!?

I can’t. Like the combination of (dark) chocolate and strawberries.

So in the chocolate cake for this trifle, there is cocoa powder and chopped dark chocolate for the full cocoa chocolatey flavor. To that adds the fresh and fruity and sweet strawberry layer. Slightly sweetened and a dash of lemon juice. And on top, there’s a refreshing yogurt layer.

To additionally top that off sprinkle some chopped pine nuts, chocolate flakes, finely chopped chocolate or some hazelnut brittle over the yogurt layer. All that goes incredibly well with the strawberries and the chocolate cake.

The trifle is fresh and fruity. Has the perfect sweetness and is heavenly creamy. And you can easily make it at home.

Recipe – 4 portions:

Chocolate sponge cake (cake tin ∅ 24cm):

100g flour
65g sugar
1 ½ tbsp cocoa powder
30ml oil
120ml sparkling water
½ tsp vanilla sugar
½ tsp baking powder
1 pinch of salt
30g dark chocolate, finely chopped / grated

Baking: 180° – 35 minutes

Strawberry Layer:

300g strawberries, frozen or fresh
1 tsp vanilla sugar
½ lemon, squeezed out
1 tsp agave syrup

Yogurt Layer:

12 tbsp plantbased yogurt
2 tsp vanilla extract

Topping:

4 tsp pine nuts, chocolate flakes or hazelnut brittle

– Chocolate Cake bottom layer:

Mix up the dry ingredients flour, sugar, cocoa powder, vanilla sugar, baking powder and salt.

Then stir in the oil, water and chocolate. Fill the dough into a greased tin.

Bake the cake at 180° grad celsius for 35 minutes.

When the cake is ready let it cool down.

– The strawberry layer:

For the strawberry layer, blend the strawberries together with vanilla sugar, lemon juice and agave syrup. Eventually, when you used frozen berries and the mixture is too thick, add 1 to 2 tablespoons of water.

If finished put the mixture in the freezer, for cooled ice cream like mixture. Or just put it in the fridge to keep it fresh and cool.

– The yogurt Layer:

Just mix up the yogurt with the vanilla extract.

Put the layers in glasses:

Crumble the cake into smaller pieces.

Put the crumble into the glasses and gently press them down.

Spread the cooled strawberry layer over the cake crumbles and even the layer with a spoon.

Carefully put the yogurt on top.

Finally put on your favorite topping.

Done!
