Vegan Hazelnut Cookies - Quick and Easy

Recipe for approximately 24 pieces:

Ingredients:

  • 125g vegan butter, room temperature
  • 75g brown sugar
  • 1 tsp vanilla sugar
  • 2 tbsp plant-based yogurt, room temperature
  • 180g flour
  • 1/2 tsp baking powder
  • 50g roasted ground hazelnuts
  • 40g chocolate drops, dark

Bake it: 180° celsius – approx.12 minutes

Instructions:

  1. Cut the butter into small pieces.
  2. First, mix the dry ingredients (flour, sugar, baking powder, vanilla sugar, hazelnuts).
  3. Add the plant-based butter to the bowl and knead it together with the dry ingredients either with a food processor or with your hands. If the butter is still cold, it’s probably quicker and better to use your hands as the warmth helps the butter to knead well with the other ingredients.
  4. When everything starts to come together, add the chocolate drops to the bowl and knead into a nice homogeneous dough. If the dough has become too soft, simply refrigerate it for 10 to 15 minutes.

  1. Then, shape small dough balls with your hands or a scoop and place them on a baking sheet. Flatten the dough balls slightly to create nice cookies.
  2. Bake the cookies at 180°C (fan-assisted) for approximately 12 minutes.
  3. Allow them to cool and sprinkle with powdered sugar if desired.
