So here is one more of such a recipe for you. Lovely vegan banana muffins with chocolate chips.
Basic ingredients for baking, like flour, sugar, baking powder, oil, and chocolate (well, basic, not only for baking ;-)) and vanilla sugar – I always have in my pantry – I could easily bake three cakes spontaneously, as far as quantity is concerned. Also when shopping, now and then some packages of sprinkles and a package of chocolate chips drop into my shopping cart ;-). But then, sometimes they get stuck in the back of the pantry and I rediscover them after a while.
So, the chocolate chips emerged from there. And so I thought I should use them for baking some muffins. So chocolate and banana muffins it is. A combination that is so good, that no one can resist ;-). Actually, there’s not much to say about this combination because it’s such a terrific classic. Let’s start baking!
If you don’t have chocolate chips in your pantry, that’s not a problem – you can chop up some chocolate with a big knife and use these chocolate chunks.

Recipe (for 10 muffins):
120g flour
90g sugar
2 tsp baking powder
1 pinch of salt
1 banana
30g oil
100g water
75g chocolate chips
Baking: 180° degree celsius – 25 minutes
Combine the flour with sugar, salt, and baking powder.
Peel the banana and cut it into few smaller parts. Put them in a small bowl and mash them with a fork.
Put the oil, water, and the mashed banana into the bowl with the dry ingredients (flour, sugar, salt, baking powder).
Put ¾ of the chocolate chips into the other ingredients. Next, mix all ingredients with a spatula. Only as long as all ingredients are well combined.
Now put the dough into the muffin forms. Put the remaining chocolate chips on top of the muffins.
Bake the muffins at 180° celsius for about 25 minutes.
Let them cool down and dust them with some sifted powdered sugar.
